Ingredients: -Two chicken thighs with bone, skinless -One and a half cups of water -One teaspoon of olive oil -One garlic clove, minced -One carrot, chopped -One celery stalk, chopped
Instructions: In a medium saucepan, combine chicken thighs, water, olive oil, garlic, carrot, and celery. Bring to a boil over medium-high heat. Reduce heat to low and simmer for 30 minutes. Remove chicken from the pot and allow to cool. When cool, remove the bones and chop the meat into small pieces. Serve immediately or store in the fridge for up to two days.
